I tell you what condiment combination is an absolute gamechanger for chips.

Dutch-style mayonnaise (Heinz do a "Dutch chip sauce" that's available here, in Morrisons at least).

American Chip Spice - favoured chip condiment of the Hull area, but available in your local B&Ms or Heron Foods for about £1.

You cover the chips in the chip spice.  You want them to be basically red.  It's a really dry flavour, like a paprika-y version of dry roasted peanuts.  Dip those badboys in Dutch mayonnaise, and bang!  Best chips ever, with something like a burger for example.

The other chip condiment related thing I've adopted is on the west coast of Scotland, I've noticed the chipshops use spray bottles for the vinegar.  Again, this is a gamechanger - you spray your chips with vinegar and all the chips get an even coating of vinegar - no soggy ones, no dry ones.  Just a perfect, thin coating of vinegar.  For your fish-based dishes where you want a vinegar-y chip.

That's my chip tip.  Ditch the ketchup, it's for kids - and go chip spice & Dutch mayo, or salt & spray bottle vinegar.
