A few years ago I saw njuda on a cooking program.
So hunted a big slab of it down from a posh deli to make pizza for a bit of a dinner party.
It wasn’t great.

You don't need big slabs though, just subtle amounts dotted about. It's the perfect pizza ingredient!

It's not that everyone has to like everything, obviously. It's just that if you have such a tepid reaction to nduja, it can't have been very good nduja.

Main thing to say about it is that it really isn't fancy food, it's a way of preserving sausage meat from Italy's second poorest region where they often bring you a bowl, for free, in totally normal restaurants. Spicy as all hell, too, they're insane down there.

Hey you don't have to like it! It was more that you sounded underwhelmed, and one thing nduja should do - like it or not - is provoke a strong reaction. That's what made me think maybe you got a bad batch.

I'm not an expert, but I think your first mistake might have been buying a specialist Italian sausage mush from a Polish deli.
