If its dangerous play then its a penalty, surely? I agree that its all in the intent but if - and I haven't seen it other than a replay of the decision once - the Sunderland catches him then the decision is what to award. The referee would have given an indirect if it had have been head high but given where his foot was the referee thought it was reckless whether intended or not. for that, it had to be a pen?

Sorry Steve, I have to disagree.  The Southampton defender is making a genuine attempt to play the ball, his cause is not helped by the fact that the Sunderland player is lowering his head to head the ball which, if you want to take it to the nth degree can also be construed as dangerous play.
This is irrelevant, surely?

If a defender slides in and makes a genuine attempt to win the ball and takes an attacker's legs out in the area then it's still a penalty. Regardless of how honestly he was trying to win the ball.

An indirect free kick for dangerous play is given if there is no contact made, otherwise direct.

Gary Cahill's been at Chelsea for three and a half years and has won 1 x Premier League title, 1 x FA Cup, 1 x League Cup, 1 x Champions League and 1 x Europa League.

There can't be many players who have won pretty much every major club trophy in such a short period of time.

Maybe this will clear things up a bit:

Indirect free kick offences[edit]
Fouls punishable by an indirect free kick are:

When a goalkeeper, inside his own penalty area:
controls the ball with his hands for more than six seconds before releasing it from his possession
touches the ball again with his hands after he has released it from his possession and before it has touched another player
touches the ball with his hands after it has been deliberately kicked to him by a team-mate (the back-pass rule)
touches the ball with his hands after he has received it directly from a throw-in taken by a team-mate
When any player in the opinion of the referee:
plays in a dangerous manner
impedes the progress of an opponent
prevents the goalkeeper from releasing the ball from his hands
commits any other offence, not previously mentioned in Law 12, for which play is stopped to caution or send off a player[1]:37
Some technical breaches of the rules, such as the offside offence, result in play being restarted with an indirect free kick, though these are not considered fouls.

and a direct free kick:

kicks or attempts to kick a player...

for it to be a direct free-kick the referee must consider how the action was done:

recklessly
carelessly
with excessive force

It seems the ref summed up the incident and thought the challenge fell into this category and gave the penalty. I thought he was probably right, too.

Hull v arse tonight. Kind of looking forward to seeing hull expose arsenals weak areas but obviously without winning, in fact be good to see arsenal win without deserving to.

I'm looking forward to Hull getting their three best players sent off and Arsenal ripping them a new one.

Don't disagree, just would like to see some of arsenals frailties exposed.

That sounds fine. Maybe with three or four injuries to keep those players out for about a month or so.

Yeah, i'm hoping for Sanchez to put Hull to the sword, then get a hamstring injury, Ramsey to slip off the team bus and suffer a 4 week injury.
