If I was to log-in and browse this site from a Smartphone, would my details (i.e, mobile number, network provider, location, gmail address) be available to the site admins or the moderators?

They get your IP address and probably your browser string (which will state what browser and device you're using, this is used for dynamic content) but that's your lot as standard.  You can choose to allow the browser to share your location (country) as well but I have no idea if that data is even tracked on SMF forums, it's more commonly used by localised services (such as google) to tailor their page.

I am an admin (of a couple of French websites) so I will reply.

They get to remotely activate your camera phone while you sleep and can even lower the temperature of your fridge via Android. If you wish to take preventive measures in order to avoid tepid Staropramen and mouldy cheddar you need to microwave your handset (this has the added advantage of charging your battery 4 times quicker than via a typical AC mains charger).

Quite correct, and that is why Android operating system releases are named after confections which would melt if left in the sunshine.  I hear tell of an unfortunate fellow who got on the wrong side of the  Droids of Destruction, a pernicious band  of bespectacled beardy geek Sys Admins and systems programmers, and they reprogrammed his foolishly jeans pocket placed mobile to fry his tackle: Operation Moby Dick.

Banjaxed his bollix the bearded baldy bastards.
