I'm not sure clauses like that are legal...

You cannot stop somebody from working. Any attempt to enforce that clause via way of injunction would be rejected by the Courts.

I forget the case now. Some pish 70's band like Saxon.

If he has signed a severance contract which includes such details then it would be hard for him to argue otherwise.
